These days you will find pani puri even in restaurants and pubs. But the joy of eating it from the hands of the uncle standing with his pani puri cart next to the corner of the street is simply unparalleled. Nothing can make that experience and certainly not the experience of sitting in a chic pub and grabbing a bite of the desi pani puri. Whether you call it golgappa (गोलगप्पा), pucka (पुचका), or pani puri, you simply can't get enough of it when it comes to street foods like these. A glimpse into the world of pani puri

Well, we all know what pani puri means but let us still break it down for you! “Pani” literally means water and puri implies inflated crisp dough cups that are hollow inside. So basically, you have to fill it up with a mixture of mashed potatoes or boiled peas and serve it with tamarind water. That is the whole arrangement with pani puri.

The water is supposed to be tangy, sour, and spicy! You can balance the level of spice with some sweet tamarind paste. The sweet chutney is known as Meetha paani which is often combined with teekha pani and then served with the filling.

The filling inside mainly consists of boiled peas, and sometimes even sprouts along with mashed potatoes. It is not known for sure who invented pani puri but whoever did, was a blessing on earth. In Mumbai, these are known as pani puri but in the northern states, it is called the golgappa while in West Bengal, it is known as phuchka! Different names, same identity, same feeling, and same emotion of warmth and craving.

General steps and tips to make pani puri

Now, let us quickly have a look at how we can manage the pani puri at home. Never made it before? Well, do not worry! You have us! Go through the tips and you can make some yummy batches of pani puri for everyone in the house.

How to make the spicy water-

To prepare the teekha pani, you can use some freshly chopped coriander and mint leaves. Chop some ginger as well. However, do not use the stem of the leaves as they can turn your water a bit bitter when soaked for long. Take them in a bowl and add some chopped chilis, cumin powder, tamarind, and a little jaggery too. Now put it into a blender and prepare a smooth consistency!

This is your green chutney. Now use a steady proportion of water to the chutney and create this green and yummy teekha paani! The very taste and fragrance of the water will make it hard for you to resist. Do not add too much water compared to the chutney or the flavor of the chutney will get paler and unappealing.

How can you make the potato filling for your pani puri?

Begin off by boiling some potatoes first. Once the potatoes are done, you can rinse the water and then peel the flesh off.  Smash the potatoes and then add some chopped onions to it. Sprinkle some chili powder, chaat masala, and some cumin powder on the mashed potatoes. Add some salt based on your taste preference. Now blend the masalas well and your potato filling will be ready.

The final step is to assemble

Now you need to assemble the pani puri to enjoy! Create a hole in the dough cups and place a small amount of mashed potatoes in it! Dip the arrangement into the water and enjoy it to your heart’s content. Now you are ready to serve it to the guests! Have a small gathering in the evening? Well, then you should grasp this opportunity to make pani puri at home. No one can give up on plane puri when it is served on the table. However, if you are making the dough cups or puris at home, make sure you have them right away or they can turn soggy.

You can easily purchase puri from the store and prepare the plane and potato filling by yourself. However, do not put the potato inside the puri beforehand or it can turn your puri soggy again. Right before you serve the guests, you can make the necessary arrangements.

If you are preparing puri at home then use sooji or maida for that purpose. However, the easiest thing to do is buy from the store and skip the step of making puri by yourself since it can turn out to be a time-consuming process.
